Lemonade Wedding and Expo

When life gives you lemons, what else can you do but make lemonade? The shear Mosaic Group and Blue Moon Catering are planning to help make lemonade—figuratively—for an engaged Southwest Florida couple facing sour times.

Couples who want to get married but have been unable because of financial obstacles, job loss, health risks, or other complicated situations are invited to enter the “Lemonade Wedding Giveaway” for an opportunity to win a wedding and reception for 50 guests. The contest begins on Jan 5th , 2012 and concludes on Feb 14, 2012. The wedding will be held on April 15th, 2012

Couples will also be able to enter online at http://www.shearmosaic.com/ under the events tab of the site. The winners will be announced on Feb 14th, 2012 at midnight. After the announcement is made the lucky couple will meet with the Shear Mosaic Group to finalize plans

One lucky couple will win a wedding for free at the bridal event at The Clarion Hotel In Fort Myers Fl on April 15th, 2012. Contestants are required to submit a paragraph or 2 as to why they should receive the Shear Mosaic Lemonade Wedding with a photograph of the couple (themselves) and a fee of $50.00

The Discriminating Diner visits Origami



I've dined at Origami many times over the years and not having been there in several months ventured in on a weeknight recently and had an excellent dinner with a companion. The owner was there as usual with a friendly and welcoming smile. The Restaurant has a pleasant, warm and comfortable decor and everything including the restrooms are spotless. Our smiling waitress was efficient and eager to make suggestions from a menu that covers a wide range of choices from Sushi, Teriyaki, Tempura and even Korean Barbecue which is something difficult to find in Southwest Florida. As to her recommendation we ordered the Shrimp Roll to share as an appetizer, The Roast Half Duck and A Bento Box which consists of a choice of two main courses on one plate served with rice, miso or clear soup and a house salad.

The Shrimp Roll was freshly made to order rolled with nori and avocado with a whole batter fried shrimp in the center. It was delicious and perfect with shaved slices of fresh ginger and wasabi as an accompaniment. 

My dining partner's Roast Duck was absolutely delicious. It was a half duck roasted to perfection with a citrus soy glaze. The skin was semi-crispy and the glaze complimented the duck perfectly. Duck is a fatty meat and is tricky to cook properly but this one had the right amount of fat rendered from it without being dry. It was moist without being overly laden with fat and served over a mound of garlic mashed potatoes which we thought an odd starch in an Asian Restaurant but nonetheless very good.

The Bento Box I selected was served with Chicken Bulgogi and Shrimp Tempura and was accompanied by white rice. The Chicken Bulgogi is thin slices of chicken in a sauce of soy, garlic and green onions. It was moist and flavorful and not the usual chicken dish. The Shrimp Tempura was perfect. Four jumbo shrimp with a variety of vegetables that included sweet potato, onion and broccoli with a tempura crust that was not overly greasy were served with a citrus/soy dipping sauce; traditional and done just right.   

My dining partner had the clear soup and I had the miso soup.  They were hot and just as they should be. The salad with ginger dressing was basic lettuce and shredded carrots but there is something about that dressing that hits the taste buds just right. Service throughout was nicely paced. We never felt ignored but our server was there if we needed anything.

They also have a separate sushi bar and liquor bar for patrons. Origami will definitely stay on my list of Restaurants when in need of some warm hospitality and excellent food.

St. Francis Xavier Annual Spaghetti Dinner 2012

 February 18th, 2012 at the Xavier Parish Hall at   2157 Cleveland Avenue, Fort Myers, Florida 33901. The event will run from 4PM until 7PM. The dinner includes spaghetti, bread-stick, salad and dessert with free tea, lemonade, coffee or water available to drink. Soft Drinks are also available for purchase.

Q: What is AMD?
A: AMD stands for Age-related Macular Degeneration, a disease that breaks down the macula - the light-sensitive portion of the retina that allows you to see fine detail. It blurs the straight-ahead vision required for activities such as reading or driving

Q: What causes AMD?
A: The causes of AMD are still unknown. One form of AMD (Dry) may be caused by aging and thinning of the macular tissues, pigment deposits in the macula, or a combination of the two. The other form of AMD (Wet), results when new blood vessels grow beneath the retina and leak blood and fluid. This leakage causes retinal cells to die and creates blind spots in central vision.

Q: Who is at risk for AMD?
A: Risk factors for AMD include:  Smoking, High Blood Pressure, Obesity, and Family History of AMD. Also, Caucasians and females are more prone to AMD.

A: Early symptoms of AMD included blurred vision or dark spots in the center of vision. The symptoms can appear painlessly and gradually, making early detection and treatment essential.

Q: How can AMD be detected?
A: Early-stage AMD can be detected through a comprehensive eye exam that includes a visual acuity test and dilated eye exam. If AMD is detected, further tests may be required.

Q: Can AMD be cured?
A: There is no cure or AMD at this time. There are, however, certain treatments that can slow or minimize vision loss, and, in some cases, even improve vision.

From WFTX - It's official, Fort Myers is considered one of the up and coming vacation destinations in the country.

A new survey from Trip Advisor, ranks Fort Myers third when it comes to the top 15 American destinations on the rise for the new year.

Fort Myers was beat out only by Austin Texas and Nashville Tennessee. Pensacola and Saint Augustine were the other Florida hotspots to crack the top ten.

Vision at age 60 and Beyond - Dr. Terry Tucker OD


Vision changes occur as you age.  These changes do not have to compromise your vision or lifestyle.  Knowing what to expect and seeking routine vision examinations will help insure continued good vision.

As you age and reach your 60’s and beyond,  you need to be more attentive to the warning signs of age-related vision problems that can rob you of your sight.  Many eye diseases or vision problems have not signs or symptoms to give you a warning of present or future vision problems.  They can be painless and you will not know you have a problem until it may be advanced enough that it is difficult to treat and manage.   This is why regular vision examinations are important to detect problems while they are easier to treat.

Systemic health problems can also cause problems with your vision also.  Diabetic condition, hypertension (high blood pressure), and taking some medications that have ocular side effects, are at greatest risk for eye problems.
Regular eye examinations are even more important in these individuals.  The American Optometric Association recommends annual eye examinations for everyone over 60 years old.

At age 60 and beyond, a number of eye diseases may develop that can change your vision permanently.  The earlier these problems are detected and treated, the more likely you can retain good vision.

The following are vision disorders that you should be aware of:
Age-related macular degeneration (AMD) is an eye disease affecting the macula, the center of the light sensitive retina at the back of the eye.  This your central vision where your vision is the clearest.  This is a very small area that allows you to see small detail and colors.  Activities like driving, reading, watching TV and recognizing faces all require good central vision provided by the macula.  Macular degeneration causes changes in central vision, but not the periphery.

Diabetic retinopathy is a condition occurring in people with diabetes. Progressive damage to the tiny blood vessels that nourish the retina can cause this problem.  The blood vessels leek blood and other fluids that cause the retina tissue to swell and cloud vision. This condition can cause blindness.

Retinal detachment is the tearing of the retina or separation of the retina from the underlying tissue.  Trauma to the head or body can cause this, along with advanced diabetes and other ocular diseases.  This condition can cause permanent loss of vision.
Yearly vision examinations are one of the beat ways to protect your vision.  Get your eyes examined by your Optometrist.
